The Lexington Museum on North Beach is pretty nice.

Sunset Lake/Indian Point in between Corpus Christi & Portland is a little known hideaway with some great sunset views and quite a bit of wildlife.
-My kids love the
Texas State Aquarium. Plenty to see & do with the Lexington right next door & a quiet small beach to take a stroll on.
-If you're there on the weekend,
Tx A&M-CC has some nooks & crannies to explore. There's even a hike & bike trail that goes around the entire island campus and a small beach on the road side.
-I've taken a few strolls through Hans Suter Park (near TxA&M-CC) and have always found quite a bit of bird-life.
-There's quite a few small parks on Ocean Drive in between the university & downtown. They all offer nice views of the bay.
