Trying to wrap my head around the best way to bid this job.

Basically I'll be going from room to room shooting some lifestyle shots of models in certain scenes. Charging a day rate doesn't seem to make sense because i have no idea how many shots we'll end up doing. And after a contact sheet is sent, i have no idea how many they will want to process. So I'm thinking I'll need to come up with a "per shot" price? Or a combination of a day rate and per shot price for every photo they want to process?

Day rate for your time and then per photo sounds like the right idea!

Day rate for shooting.
If they aren't processing the images (as is done by most advertising agencies)
you need to price your post according to the amount needed to satisfy the shooting plan and how many they select.
Don't underprice yourself or you'll quickly end up in the hole.
