Photographers charge session fees, sitting fees, or creation fees based on a number of considerations. Some of those are: Ability and experience, time value investment, direct and indirect expense. Clients willingly pay these fees based upon one: perceived value. As a photographer you have to charge enough on the session that if you did nothing more than take the pictures and process the proofs, you'd make a profit.
Whether you offer packages as part of your service depends on your business model. Proofing and selling is many times a separate session from the creation, if so, you don't necessarily want to front-load the sale. It's difficult to sell a package of different sized enlargements before your customer sees the results of the shoot.
There are hundreds of thousands of professional photographers and tens of thousands of business models. For that reason, you'll likely not get specifics on dollars for good. I know photographers who have $40 sitting fees and others that charge $450. One studio may sell an 8X10 for $100 and another sell a 16X20 for $100.
