As far as backpacks go, The only place I can think of is Camera-Stop in Plano. Off Preston and Parker.

Competitive Camera has a large selection of backpacks. I don't have an extra one to sell, but you can find almost anything you are looking for there.

Not sure if you can find one local but I highly recommend the LowPro Slingshot 200 AW! I have the 100AW, my sister uses the 200AW for a bit more room. But I used this line of camera pack for a 9 day trip through Italy. I was nothing short of awesome. The pack allows you to keep your lens on the body and sling it around your torso to take it out quickly for a shot. No more asking the people traveling with you, "Hey can you unzip my backpack and hand me my camera?"

The 100AW allowed me to carry my 30D, Canon 24-105mm, Canon 50mm, Sigma 10-24mm, Canon 70-300mm USM and 3 camera batteries. It was a little snug but I wanted to travel with a small camera bag so I wouldn't look like such a tourist. haha Plus it has a built in rain poncho that pulls over the entire bag to keep it safe from rain.

Anyhow, great line of camera bags.

Actually, the Wolf Camera outlet down on Harry Hines just south of 635 always seems to have a pretty comprehensive selection of LowePro and Tamrac bags (plus others) in various sizes to choose from. I doubt that the prices are any better or worse than anyplace else around and you did say north side of DFW.
I know Wolf generally doesn't get much shrift as photography stores go but a camera bag is a bag is a bag is a bag and doesn't take much salesman intervention for you to find one you like and at your personal price point. I'd suggest taking your travel gear with you so you can actually put it INTO several bags and see if it fits before you choose the one you'll be taking home.
