That's why when I'm carrying a small enough kit I prefer either a sling-style bag (Tamrac Velocity Series, LowePro Slingshot series), or a belt with pouches (such as systems offered by Kinesis, ThinkTank, and LowePro). The only time I'll use a backpack for actual outings is when I'm carry a large kit, in the 20+ pound range. Other than that the backpacks are more for storage or travel.
I agree that the backpacs are frustrating because you have to take them off in order to access your camera gear. I was intersted in the LowePro Slingshot series till I saw one and realized it was to small for the gear I use most often. Just be sure to try and find a dealer with the bag you want so you can check it out before buying it online to make sure it is what you have imagined it to be.

I have the Lowepro Micro Trekker 100 (D70, SB-600, three lens and several filter) and there is no more room. Like I was doing some outdoor shots and had to carry my tripod.
When you get one, get it a little bigger then you need today.
I also have one very large Lowepro backpack with wheels and moe space then I have need of, I won it, some times I thinks I might just sell it. It list over $300.00.

Tamrac Expeditions are a very spacious backpack also, with several sizes available.

Me too. Nowadays for hikes I use the kinesis belt with a few lens puoches on it and a Camelbak Rim Runner (larger sized, really more of a daypack). With this approach I can carry 2-3 lenses + flash, along with camera and one lens mounted on my tripod which I carry over either shoulder. The Camelbak not only carries my water but has room for snacks, a rainjacket, and other odds and ends. This system works pretty well as long as I don't need both hands free to scramble/climb; but it does somewhat limit the amount of gear I can bring along (for instance the 200-400 is pretty much out of the question).
