As the prices come down and performance goes up, it very well may be a better option to look at a HD tv instead of projector for proofing

600 will get you a lot of TV these days, especially if you are primarily going to just proof on it

Projectors are subjective... to a point. The specs only provide a starting point.
More contrast is usually good
More Lumens only matters if you plan on projecting in a normally lit room. If you are darkening the room, you don't need lots of Lumens.
I like resolution that closely matches my monitors resolution, that isn't always a plus.
Reviews from the home theater guys usually point in the right direction.

Most of today's projectors provide 4:3 and/or:16:9 widescreen projection. The 16:9 seems like overkill until you display two portrait oriented images side by side (if your software allows).

And if you select a unit that is portable along with a good, portable screen, it can be used for more than image proofing.

Also may want to research how many hours a bulb is good for and what the replacement price of a new bulb is. (I think most bulbs are rated for about 1000 hrs now days).

BTW if a unit has a higher lumens output rating it would mean that in a darkened room you don't have to push it's brightness towards it's limits and you put less strain on the unit overall.
