In 35mm, Tri-X is alive and well and CHEAP! Sold at Freestyle as Arista Premium 400. The Arista Premium 100 is Plus-X.
In 120, Kodak offers two flavors of Tri-X.

There are enough Darkroom Cookbooks and chemical sources around to make everything you need at home forever. Wet plate still lives. Plastic film base not required.

ps: I forgot earlier. You can go to K-Roger or HEB and buy enough stuff off the shelf to make a tolerable film developer and stop bath. I'm not up on fixer formulas, but you might be able to make one of those too.
