If you want mouth watering bokeh with video....the 5D2 using a FF sensor will really impress you. And to answer your question...No, standard video equipment use much smaller sensors that inherently give you deeper depth of field. You can get nice bokeh when zoomed in tight in the right conditions, but nothing like a bigger sensor (unless you get a much higher end video camera).
The 7D video looks good, but if you're looking for serious shallow depth of field, the 5D2 will do even better.
Having said that, I have been on the preorder list with my vendor since the day the 7D was announced. Been using the 5D2 since first week of December and very impressed with video (especially since they upgraded the firmware to allow full manual control).
