100 - 400 will be more than enough range to get you some good shots. The 5.6 will be fast enough as the races are during the day but if the sun goes down and the lights come on you will find that it will be quite slow.
I would also take a "normal prime or zoom" with you as well. Something like the 24-105 would be perfect as the pits are open access and you can get close to the cars.
I shoot my brother there on open track nights (fridays) and it's all under dark stadium lighting (and it sucks lol). The last 3 images are my brother racing shot with a 24-105 @ f/4.
Look at last 3 images in this gallery These were show from the side of the track and not in the stands so the 100-400 as you can tell will be plenty of reach.
