Assuming this is on a FF body,

Canon 24-105L IS f/4
Canon 35L f/1.4
Canon 70-200L IS f/2.8 Gen II

Of what I currently own, I would say - 50mm 1.4, 85mm 1.8, 100mm 2.8 macro.

500 f4, do not leave home without it!
80-200 2.8 I would like to upgrade to 70 200 2.8 vr
my sweet wife got me this for Christmas 16-85 so I guess I'm set !

For what I shoot, Sigma 120-300mm f2.8, Nikkor 85mm f1.8 and Nikkor 35-70mm f2.8 (yea it's old but on the Nikon D700 is it dang sharp).

This is 3 but to be truthful, I grab the Nikkor 70-200mm f2.8 just as often as the other 3.

85mm f1.2L
16-35 f2.8
70-200 IS f2.8

Gotta mix up the holy zoom trinity with one from the prime.

For the Canon
24-70mm f/2.8
70-200mm f/2.8
300mm f/2.8

But why 3? Why not 2, or 4, or 7?

Why did you arbitrarily decide to limit us to 3?

Canon 135 f/2.0

But I agree with Kent, from a practical standpoint why three?
I seldom use the 135L even in very restrictive venues.

Three lenses give you a good selection of subjects to shoot. I use 24 for city/landscape... 180 for Macro... 75-300 for birds and wildlife. I also use a tripod.
