Basic camera workshops are often posted on TPF. An alternate to HCP would be Lone Star College if you're looking for a progressive classroom structured format. LSC-CyFair, Kingwood and North Harris campuses offers them:

I was fortunate to have had opportunities to be mentored by a number of pro-photographers here on TPF. The GTGs were beneficial both socially and technically. And some things, you just have to learn on your own using various resources online, library, magazine, etc...
In case you haven't read it already, "Understanding Exposure" by Bryan Peterson is something often suggested to photographers of just about any skill level. It's one of many sources out there that breaksdown and simplifies how aperture, shutter speed and exposure affect each other.
