I see them shoot someone and there's like a hundred flashes going off at once. How do you get a good picture with all the flash interference?

Typically flashes fire for only a couple thousandths of a second or so. Even though it looks like interference it's unusual (but it does happen) that someone else's flash goes off when your shutter is open (which is probably in the range of 1/100th of a second).
