As you've discovered, Shannon, there's precious little DOF when shooting close. It's all about finding the angles that make the most of what little there is. There's an old trick where you use the flat of your hand to simulate the plane of focus and then align the camera in that plane. Mostly it's practice and more practice.

No tripod unless I am shooting for HDR.

I'd try using a tripod and you need to squeeze your aperture down some. I noticed it was 6.3. That doesn't give you much DOF. Try to get down to about f/11, I normally start my shots at f/11 and 250sec.
Of course if you go to the smaller aperture, you'll need some flash.
