Several of my hunting friends have asked me to shoot photos of their hunts from deer and duck blinds. I'm thinking a good DSLR with video capabilities would be a good solution. I currently use a Canon 40D with a number of canon and Tamron lens.
What Canon body would be a good solution so I can utilize my existing lens'.
I woiuld be looking to do what the photographers do on the Outdoor Chanel if possible with a combination of still and action shots with sound.

Only way to go Canon 5DMkII. See this thread on one used for that.

It sounds like the gear you have already should be sufficient, unless you really need video...

I am curious ... A Canon 5DMkII has good sound? Someone once said, good audio makes or breaks video.

I have shot hunts with my 40D plenty of times. I would agree with the russel graves comment he is INCREDIBLE..not only at photography but his ability to tell a story with his photography is amazing.

Most of the deer hunts are early morning or late evening so fast glass is very helpful

No, but then no bastardized dSLR with video will. It's the best he can do and still have a dSLR and use his Canon lenses assuming he doesn't have all EF-S lenses.

The sound can be improved by recording the sound separately. A google search will show the various options out there.
