Making your own Sushi - Anyone do it?

I have a ceramic blade and I absolutely adore it, even though it has a small chip in it. My BIL got it for me for Xmas last year because I HATE (and I mean with the power of a thousand suns-hate) the sound of knives being sharpened. Since last Christmas, I've probably replaced about a 1/3 of my knives from metal to ceramic.

I have to agree with what everyone else has said... good knife, bamboo mat, as well as a good imagination and time.

a small tip, when you get the bamboo mat, cover it in plastic wrap. makes clean up a TON faster! Also MAKE SURE you get sushi grade fish otherwise your sushi comes out tasting funny! hehhee I made that mistake the first time. around the DFW area Central market is a good place for sushi grade fish. so are the asian super markets.

I see them do this at a few restaurants. I wanna here some good recipes as well, this has me thinking I wanna try too!
