I think it might be the lack of processing power on the 3G.
My 3G has been jailbroken for while and I've been using
videorecorder3. Overall this app is decent. There are times when the video pauses for a brief second, but that depends on the length of the video and the lighting situation.
On the other hand, the video app that comes with the more powerful 3GS takes great video! My father-in-law has the 3GS. We were both shooting some indoor video on our iPhones. We compared later that day and his video was 10x better than mine.
