Why are you fixating on this???

I never think about white balance.

Set it to auto. Leave it alone.

Shoot in RAW. Put it where you want it in Lightroom.

Now move on to something else.

Some of us do try and "see" in monochrome.

I think asking the question is a bit like asking why paint or draw when we have cameras? Monochrome is just another medium.
