I have been on a kick lately of trying to come up with interesting flavors and combinations for gelatin (jello always seemed like a great summer dessert)

I made some coffee flavored concoctions that were for all intents and purposes pretty nasty. Put enough whip cream on top and you could swallow them, but not enjoyable.

I am heading to a party this weekend so I decided to try my hand at some of the more potent potables of the jello shot variety...

the key with all jello recipes that I have found is 8oz of hot liquid and 8oz of hot liquid per gelatine packet -- being that I am using two packets for both recipes, you will need 16 oz of hot that the gelatine is dissolved into combined with 16 oz of cold.

I made cuba libre shots followed by margarita shots.

The recipe for cuba libre jello shots:
2 one liter bottles of coke
2 envelopes of knox gelatin
3 tablespoons of sugar
1 cup (8oz) of rum - your choice of type
2 oz of rose's lime juice
handful of ice cubes
20-25 2 oz plastic containers

take one of the liter bottles of coke and heat it to a rolling boil in a sauce pan
while that is heating mix the rum, lime juice and ice in a 2 cup measuring cup and then fill the rest full up to the 16oz line with coke.
once your cola on the stove in boiling, add in the knox gelatin and sugar and stir for 2 minutes until completely dissolved. Combine the two mixtures together and stir until completely mixed.
transfer to the plastic cups and refrigerate for 2-4 hours until firmly set.

for the margarita jello
1 can of limeade frozen concentrate combined with water to get 32oz of juice (makes 64 oz normally)
8 oz of Tequila
4 oz of Triple Sec
handful of icecubes
splash of roses lime juice
2 packets of knox gelatine

as with the above, bring 16 oz of limeade mixture to a boil, then add in the gelatine. Once the gelatine is dissolved you mix tequila, triple sec, lime juice ice and enough limeade to bring the cold mix total up to 16oz.
combine the hot and cold
put into your plastic containers and refrigerate until set up firm.

as I mentioned above, you can make jello out of just about any combinations of liquid, just follow the 8oz hot to dissolve and 8oz cold to start the setting process.

Non alcoholic juices need to be more concentrated than regular to get the full flavor from them.

Just thought I would pass on some of the fun I have been having this summer with gelatine!

Sounds good, will pass this along to my brother. He's the one who always made jello shots for our tubing trips down the Guadalupe, before they were banned..

he still makes them just not as often now.

Thanks for the advice and be careful because before you know it you've had 5 too many, as you may already know.

wow that recipe is so intricate! what happened to the days of using Jello boxes? Lol well when I was in college I made them this way, simply substituting vodka for the water (and not boiling either).
