Kinda depends on whether you're looking for an outdoor in the country trip, or a city street trip.
If I were to be in the mood for the country, I'd go to Westcave Preserve. After you get done touring there, you could go across the Pedernales river to Hamilton Pool, or next door to Reimer's Ranch Park. They are all right in a row, and you've got a very scenic river crossing in between.
For city stuff I'd go down to San Antonio, and either walk the Riverwalk, go up into La Villita, and then go over to the Mercado (5 or so blocks west of downtown), or I'd visit the missions. Or the McNay museum and grounds are great too.
