iTunes files are (or were) often mp4 format, more compressed. Not sure they are anymore, I avoid them like the plague. More likely the issue is DRM, Digital Rights Management that prevented moving the files too many times.
However, I have burned audio CDs numerous times with songs purchased from iToons, but not using iToons to burn (so I know they will burn). Older downloads may still have the DRM restrictions on them and will not burn, at least thru iToons or other burning software that recognizes DRM. The normal way around it is to burn them to audio using some other application (Roxio, etc) that doesn't pay attention to DRM, them reconvert/rip the audio file back to MP3. That strips the DRM properties from the file.
Yes, it is a bit cumbersome, and it takes a compressed audio file and recompresses it again so there is some loss of fidelity. Whether you can discern the loss of fidelity is subject to debate.
There are newer applications that will literally strip the DRM from the file without you having to go thru this but I haven't used any.
