Depends on what you are shooting, but if you pick up a large calibration target from ed pierce to use for setting your white balance, you can also use it to set your exposure. This will work for ambient light, studio strobes and speedlites used in manual mode.
It's less expensive than buying a light meter and provides you with a great white balance tool.
Barring that, use a large sheet of white poster board and don't let the white spike on the histogram touch the right side...

(white shop towels will work for this also, and pack/stow easier than poster board)
