I've eaten Armadillo and it tastes like pork. Seriously, I'm surprised how most Americans just don't have a taste for interesting meats. Also praire dog is good and if fixed like vension tips with a burgandy sauce.
As an a survival school intructor once told me if it moves you can eat it.
I've tried to live by than when I hunt and travel.
As for how much a pound, why buy it when it's free for the taking.

My uncle once mentioned that my granddad used to hunt skunks when a boy. I asked "Did he have any friends?" My uncle said "Well, there were some other boys that hunted skunks with him...". (They were after furs, not meat, I believe.) Later my dad mentioned he had heard about one of my uncles getting sent home from school due to skunk smell.
"But turtles, frogs, iguana and armadillos can be eaten under one condition: The meat must come from a licensed and inspected facility." The problem with that is that you can't raise domesticated armadillos in Texas, and can't sell wild ones in NYC. They need to get together and work out details.
I've read that a significant percentage of armadillos carry (but are not infected by) leprosy, for what that is worth.
