For me (and Nikon) it came down to this:
#1: Ergonomics, the Canon Prosumer bodies and the Pro bodies just did not feel as "good" to me as the Nikon.
#2 Optics: Nikon had what I wanted.
Thats pretty much what decided me on Nikon.
How about you?

Nikon, due to ergonomics as well. My first SLR was a Nikon N80 and it just felt natural in my hands.

I shot both Nikon and Canon film cameras over the years. Both were great manufacturers. I chose Canon digital for the image quality (not to mention they were light years ahead in technical advancements.)

I had shot Minolta for over 30 years. One day a friedn told me he had purchased the D200 as a main camera. I had already handled a 30D and did not like the feel. I bought the D200 and some lenses after posting some wuestions here. I still think Minolta has the best ergonomics, but the D200 is a close second, and it didn't take long to get used to the differences.

Bought a AE-1 back in the early 80's and just never thought of changing. I am on my 7th canon and going strong. Still have all 7. The reason I bought canon back then was I couldn't afford a nikon.

Chose Pentax because of: - built-in Shake Reduction
- ability to use all K-mount lenses ever made (take that Nikon!)
- ergonomics
- best-value

I have had a Canon since I was a teenager. I don't think my hands would pickup anything else. Reliability, easy to use, excellent service, all of these have added to my staying with Canon

Bought a Digital Rebel based on the Canon name, place in the market and price. Progressed from there.

Canon for the same reason as Fran plus I wanted a full frame sensor. For me the advantages were
1. full frame sensor
2. lower noise and higher quality, high iso images
3. availability of high quality glass (look at the ratio of availability on FM forums buy and sell forum and here for that matter)
I think Canon has dominated the professional digital market because of their lens line up and in my mind when you are buying a body, you are buying into a lens system. I beleive Canon has a superior lens system.

Started with an Olympus OM-1 in 79' due to the size and innovations in the OM system. Added to it over the years, OM-1n, OM-2n, OM-4, winders, databacks, glass. Still feels great in the hand.
Used a Kodak DCS420 (built on a Nikon N90 body) for several months in 97. It has some idiosyncrasies I wasn't used to dealing with in my OM film systems, but did it's job okay. I had no trouble getting good images out of it for use in computer aided instruction and even did some work with it in technical imaging for engineering support.
Nikon film bodies always felt big and clunky to me. (OM has a way of making everything feel big and clunky) So, when I decided I wanted to go digital (dslr) I bought a Canon G3. The G3 had the same control interface as the 10D and I thought if I could learn to use and understand it, then the 10D would be be no problem.
I've gone to Canon and stayed due to their technology push, generally lower noise and overall system support.
Having a P&S with controls similar to their DSLR didn't hurt either.

I went with Canon because it was superior in every way to the "other" brands.
