Has anyone been and have helpful insight on fun things to do/see/take pics of? Im not mormon, dont know if that matters or not.

It shouldn't matter much whether you are Mormon or not. The only big difference is you won't be allowed in the Temple, but you can still see it.

In the downtown area, the biggest sightseeing attraction is probably Temple Square. If you can arrange it, you should try to hear something at the Mormon Tabernacle. At least go to see it, and marvel at the acoustics. (You literally can hear a pin drop from the other side of the building.)

Most of the other sight seeing that I have done is in the surrounding Canyons. Park City is a half hour away, as is Alta and Snowbird. There's alot to see there, and at smaller park areas lining any of the Canyons. You could take a trip to the Great Salt Lake, but I thought it was a bit of a letdown.

I'm sure there is more that I'm not thinking of. My brother lives in SLC and I've been many times -- enough so that I no longer do any of the "touristy" things when I visit.

Heber Valley Railroad, if you like hiking go up any of the canyons, Timpanogos Cave National Monument is very cool, if you are into history go to the capital and Lion House, Kennacott copper mine whose equipment is amazing, Antelope Island and the Great Salt Lake, Sundance Resort is just beatiful any time of year and you never know who you'll bump into same with Park City, I don't remember when Octoberfest is (it is not Oct!) Aug or Sept at Snowbird, well that is all I can think of off the top of my head for now.

Try to get out of SLC to Little Cotton Wood Canyon area. It's only about 20 min away. You can drive up the canyon and head towards or all the way up to snowbird. There's some cool stuff to see. Very scenic. Tons of pull offs on the side of the road and you can hike through the forest. If you pull off to the right while heading up the canyon and hike in to the right, there's a little creek thats kinda cool. Here's wikipedia about it:
