Sheryl and I marked our 4th Anniversary on Jun 4th yesterday. I am indeed a very lucky man!
Our idea of a great evening is to spend it at home and on the patio. The last 3 days we have had sustained winds of up to 30-35mph. Very unusual, but it didn't ruin our evening, just kept us inside for the meal we made together.
This was a grilling event, not smoking, so the Oklahoma Joe's was pressed into service.
We had a salmon filet to be planked on the grill. I cut the filet up and seasoned it with salt, lemon pepper, and a potlatch type salmon dry season mix. Cut up a fresh lemon for a garnish. Here they are waiting for the grill to get going.
You must soak the wood planks in water before use. I usually use cedar planks, but this time I tried some adler wood planks that I had. This was my first use of adler, so it was a bit of an experiment. Here they are underwater, held down by a couple of spoon rests. The wood wants to float!
As always, a grill chef needs a few tools. My well worn quilted Chicken pot holder has seen much service, and protected me well.
What would a chicken have in it's mouth, but a book worm, studying a cook book, of course!
Also the chef cannot do without a Mexican Lizard to guard his Cerveza. A brave guard, I have not lost one yet!
It's time to light the lump charcoal with the trusty electric loop starter.
Bank the coals against each side of the grill.
Closing the lid for afew minutes gets the coals under control. Place the soaked planks with the salmon on the grill. They need to be shuffled around every few minutes. Salmon cooks rapidly, but the wooden planks shield the fish from the heat, so you have to fly by the seat of your pants at this point.

Sorry for the front-focus on the smoke and the soft focus on the filets. The adler wood really burns much more rapidly than cedar planks and creates a lot more smoke for the camera to see. The adler smoke flavor was very pleasant, but I think I prefer cedar wood for planks.
