I didn't want to hijack the pan method, so try this...
Some of you may remember Dixie's Roadhouse, on I-10 in Houston. They had Tabasco steak to die for. I don't recall if it was a filet, or ribeye. I had it a couple of times and decided to try it myself.
Well, here's a surprise. No matter how much Tabasco you put in the bag to marinate the meat, you simply cannot get the Tabasco taste that way. After several attempts, I figgered it out. You have to liberally, and I mean liberally, shake Tabasco on while grilling the steak. Wa-a-a-a-y-y-y more than you would expect.
Odd thing is, the Tab heat is not there, but the flavor is. M-m-m-m-m-m-m...good!
