"Dove season" is the hunting season for a migratory bird here in Texas. In the "North" zone (anything North of I-20 to Fort Worth and from there I-30 to Texarkana) the season starts every year on 1 September. We don't really have too many deer up this way (There is not even a deer season in Lubbock Co.) so the start of Dove season in this part of the world is a much anticipated event for those that like to hunt birds.
Some people don't really like the taste of the dove, but personally I love it.
My favorite recipe to date, is to take a dove, and a third to a half of a jalepeno between the breast, and wrap that with a piece of thick sliced peppered bacon. Skewer it and then slow cook it on the grill until the bacon gets crispy.
If you get four or five hunters who limit out on two consecutive days, you will have enough dove to have a nice little party the following weekend, or it will make for great tailgating fare on those chilly October saturday afternoons prior to a football game!
I really do like this time of year, not the least of which because the late afternoon sun at this time of year is just that much more rich than the rest of the year! (to bring the discussion back to photography)
