I am so full, I just want to lay around like a beached whale. I made the poor man's Beef Wellington tonight:

Tenderized flank steak partially cooked, and covered with mushrooms, onions, garlic. Wrapped in saran wrap and placed in the ice box for 20 minutes to let the juices settle. Then wrap in puff pastry, and bake for 20-25 minutes. After 15 minutes drain juice from pan, and put back in oven (This prevents the bottom crust from getting gooey). Serve.

The REAL thing is made with Filet Mignon, and Fois gras. I despise liver, so no fois gras for me.

Then made oven roasted potatoes in olive oil w/ onions (Onion Soup mix), Fresh steamed asparagus, Fresh french bread, Irish Butter (HEB $4.95 a bar), Desert was homemade Chocolate Thunders.

Served with a Nice Llano Estacado red wine. CABERNET SAUVIGNON CR a nice full bodied red. http://www.llanowine.com/detail.aspx?ID=12

Hey Murph,
Have you tried the "Newsome Cabernet" from Llano?
I know the vineyard it comes from wins a ton of awards, plus the owner, Neil Newsome is a friend and has been a lot of help to me as I started my vineyard. If you have not tried it yet give it a shot.

Llano's Viviano super tuscan style red is fantastic btw.
