One activity that worked very well for me when I was young and single:
borrow or rent a tandem bicycle equipped with a rack on the back. Strap a picnic basket to the rack. Insert, wine, bread, cheese, and chocolate. Determine a fairly stress free bicycle route to a Botanical Gardens, Japanese Gardens, or similar. Pick up girl and place on rear of bicycle. Ride to the gardens. Picnic amongst the flowers.
This works very well for the outdoorsy, hiking, biking kinda girl.

of course, the only MG course worth shooting is in San Antonio: Cool Crest on Fredericksburg Rd. Rough area, fabulous place.

Picnic at a lake at sunset. Food and drink (always good), outdoors (usually a plus this time of year) and sunset (romantic). Add the camera and you have what I would call a great time.

Forget the camera. Whatever you do, the focus should be on your date and getting to know her. She will like it much better if you do that and give her a chance to get to know you. After another date, trying something new and activity-ish, like photography, might be a good idea.
A picnic is a good idea. There are some good parks near Sugarland that you can go to. If you can, fix the food yourself. There is nothing sexier than a man in the kitchen.

wow i didnt realize this thread had so many comments ....

well its not a first date i'll be going on ... so she already knows

she likes outdoorsy stuff and also likes art ... i had a wild idea to take her to the park and sit on the bench ...

i'd take a photo of the "scene" (trees, flowers) and then bring out two canvas boards with paint ... each of us would paint the scene that was photographed ...

to make it more fun activity i was thinking we would switch canvas boards every 10 mins or so ... or maybe glance at each others without permission and make funny comments
