My standpoint is this, if I can work for free shooting a wedding that would otherwise have NO photographer other than Aunt Sue and her Nikon Coolpix, I've accomplished something worthwhile. They get pictures, I get experience. Fair trade, I say. I'll be taking a few classes this year, and reading tons of books. None of that is going to do me any good unless I have some real-world experience.
Ok...[/Brief derailment from the OP]Aunt Sue may have retired from her Hassey and can shoot a mean Coolpix with one hand tied behind her back. And, yes, you can go that route of classes and books, and freebies for clients. But I suggest a slight modification. Find a mentor who is doing work worthy of good money and (if you must do things for free) do it for the mentor to gain professional level feedback. Clients gush over the right smile. Professionals will get you to the next level where the lighting is right AND you captured the right smile. And a million other things along the way, like contracts and other basic business survival skills. And they will tell you when you can feel comfortable with charging for it. Then and only then will your philanthropy be truly appreciated.

I would not attempt to take customers from the photographer at the show. I would appreciate being asked to help as a second or third shooter. Just my 2 cents...
While I'm ok if someone breaking into the business sets up a booth, I am more OK with walking around making those kinds of contacts inside, including the show staff (to be included in the vendor solicitations) especially if you time it so you do not interfere with the interaction between the potential customers and the exhibitors. Stay out of the parking lot. All I see is downside out there.
