Actually, he used color throughout his career.

Probably the most famous (or notorious) was Natasha Kinski and the Serpent, taken in 1981. And then, perhaps, the Warhol like posters in the late 1960s.
He also did some "street photography", such as at the tearing down of the Berlin Wall. Definitely not the plain, white background on those. See Wayne's original link above, and look at "Reportage".
It's all good. I think we agree on more than it seems.
