Like Scott said, you need to go with a longer focal length lense-70 is right at the minimum to shoot with, also shoot in the midrange of your F stop (12-16) not wide open or closed down all the way to grab some more depth of field unless your trying to get some serious brokeh.

I have found that an easy way for me to get tack sharp eyes out of camera (no PP) is to have your lighting right. I went to a shoot this weekend with great lighting and was amazed that I was getting the same eyes I get pp normally - directly from my camera! But I was also using a prime lens which helps due to the sharpness as well.
