Deke McClelland teaches some excellent Photoshop Tutorials throught TotalTraining.com.Now,they are kind of expensive, but they are huge learning resources and cover just about everything.Deke is an excellent instructor.Deke also has a book series called Adobe Photoshop One on One. They are about $50 and they come with cd-rom training that's about 2 hours worth. The cd's are made at Total Training,so that may be the most efficient way to get a feel for the Total Training stuff. You can look around on eBay for older versions of Total Training programs. Scott Kelby is a great, prolific instructor with plenty of dvd's.So is Dave Cross. They can be found,I believe,at photoshopvideos.com

Don't be discouraged. You are not alone...
I may only be about 10 minutes ahead of you, and can hear you coming up from behind very quickly.
Right now I am relying on experimentation, and actions built by others.
It is still fun, and much less trying than the old darkroom days.

If anyone is interested, I created a tutorial showing how to use a couple of techniques using RAW files ... if you PM me I'll gladly send you a PDF file showing the steps I often use .... the filesize is around 3.8Mb, but contains some side by side photo comparisons and screen captures as I was putting together the tutorial. I'm absolutely sure that my tutorial doesn't compare to Deke's, or other folks over at NAPP, but just wanted to offer some help if I can.
