I know Six Flags won't even let you wear sunglasses on some of the rides, and cameras are an absolute 'no' on the rides. People do it, but you're not supposed to. You might check with them before hand to see if it's even worth carrying around.

I think state fairs are alot like county fairs, not many rules since all the ride owners are transient. I only plan on riding the small ones. No big scary ones, that's for sure!
