I have a question, is it better to say, set the AF to center rather then have it evaulate the whole scene to find a focus point?

Yes, the center, or one of the other focus points , focus then compose your shot. Letting the camera choose it tends to pick the closest object for a focus point which may not be what you are wanting to be in focus.

Yeah, I was finding that out yesterday and couldn't remember how to select what focus point to make the camera use.. But cool, I got it now and i'll remember that for further use.
