IN PS, i get used to Pen tool, then covert to selection for couple reasons.

Undo previous steps (clicks) if you make mistake.
I like the precision to cut tho any round edges using combination with the rest of pen tools.

Do you know of any good guides for the Pen tool? I have this problem where my Pen fills in the area between the start point, the shape created by the Pen tool, and the current step in the shape. It becomes a problem when the filled in area covers up a portion of the image I'm trying to outline.

I think you meant this?? Click on the "green" circle for outline before you using pen tools for selection to get out of shape mode. Once you get familair with pen tools, using selection is heaven.

Sorry, i don't know any good guide... u probably can find around web with google.
