Nikkor 85 PC would also give you some flexibility with focal plane, although probably not as much as a view camera.

I really should. I'm just having so much fun with my digital cameras I seldom think about it. I used to use it a lot for commercial jobs which I don't do much any more. Here's the last job I shot with it... a huge poster... big seller at the time. Taken the year the Stars won the Stanley Cup. That was kinda cool... as were these bad boys!

I'd be inclined to try a blow dryer on the pattie, see what that does for the texture and color of the chocolate. Chocolate goes to white when cold, and darker brown when warm.

Toothy bite, instead of a cut or break.

The white background doesn't work for me. Maybe a piece of glass, with a black paper backer? Or possibly a bed of many leaves?

The round shape of the patty has to be distinct, or it will be tough to identify it as a peppermint patty.

Apologies, I have to remind myself how many Canon folk there are in these parts. I guess I should have used the full model name, Nikon Telephoto PC Micro Nikkor 85mm f/2.8D Manual Focus Lens

Ah. I was assuming it was something along the lines of Canon Telephoto Tilt Shift TS-E 90mm f/2.8 Manual Focus Lens though I'm not convinced either would focus in close enough.

I think a har dryer would give the choclate the desired shine. I also think this would look best with the patty/patties placed atop the mint leaves which are on top of a pile of shaved ice. The real PITA will come from combining these two aspects

The problem I have seen with trying to freeze the chocolate is that it will turn it to a pale white if frozen too long.

I think the bite Idea sounds like a good idea.

Maybe a pic that is not so tightly cropped that could show the entire mint on the leaf might be good.
