Seriously tho, throw in some perspective photos with them close to each other and then farther away..that's for certain. You could do that with them standing or sitting, either way. Since she's shorter and he's taller, I could see that working with her full gown and him in the background....

piggyback, her sitting on his lap, him sitting up with her lying her head on his leg... both of them sitting... the possibilities are endless. same way you shoot any two subjects that are dissimilar in size! mom & kid, person & dog.... | | | |

You seem to view the height difference as a handicap- I doubt they do, probably one of the things that attracts them to each other- don't be afraid to show it.

shoot them sitting, height differences are less at that position, avoid anything that extends the height (standing in particular)

I'm 6'3 and my wife is 5'2... at our wedding 2 years back we did standard everyday poses. Remember, she will most likely be wearing large heels (my wife wore 3in heels). To be honest, the height differential didn't cause any problems with staging... you can create some neat compositions with it as well.
Also, do one where she is standing on a chair... reverse the roles. :-)

Many churches have steps at the altar--might be able to make good use of those if a creative pose doesn't work out.

Thanks for all of the responses. I do not have a problem with the difference. I didn't even notice when I met with them. At a later consultation she kept mentioning it......I told her no problem. I just want to offer several different poses to accomodate her.

Love the shots Shutterfly. I really like the last one, cracked me up. Every time I see your stuff it makes me realize I have so much to learn.
As for the OP. Sitting poses will work great for an engagement shoot. Reverse the typical position and have him leaning into her while she sits on the next step up. Also, you can pose them lying on a ground with their heads level shooting back with their feet in the background. I think it will be pretty easy and Ill bet the brides anxiety will be cured. I think she is just looking for a little confirmation from you that they arent going to look like a circus act.
