I think I know the answer to this but I thought others might have the same question.

When shooting RAW, does it matter what color space the camera is set to?

I think the answer is it doesn't matter if you are using Adobe Camera Raw. The reason I say this is down in the lower left corner of the ACR 3 window is a drop down list where I can select the color space for the image. I've tried setting the camera to Adobe RGB and sRGB, and see no difference in the resulting images. I can shoot in aRGB, then use ACR and select sRGB or conversely select sRGB in camera and then aRGB in ACR. Both resulting images look the same.

Perhaps the best solution is to shoot in aRGB, edit and print in ProPhoto RGB, and save for web in sRGB? Opinions?

My understand is that all camera settings are stored with the RAW file and used as defaults when the file is opened up in ACR

Makes no difference. The camera setting is used for the JPEG that is included, but that's about it. You set the color space in ACR (that's what that little drop down is for.)

The only in-camera seting ACR ever uses is the "As Shot" white balance. Everything else is ignored, including Color Mode.
