A lot depends what you're doing with it. I think the simplest is to shoot your subject in RAW with the gray card in the picture. Then use it for a custom white balance in your RAW conversion software for all the shots in that light.

You can also use it to set a custom white balance in camera. How you do that depends on what camera you have.

Others may have some more ideas.
