What is the difference between convert profile and assign profile in PS? Also what I do a convert from ARGB to SRGB my color sampler points red channel jump 20 points but the yet the picture seems to stay the same. Did the picture really become gain in red color?

Convert profile means to take all the Adobe RGB numbers (in your case) and change them to the corresponding values, or as close as possible, in the sRGB color space. Assign profile means to change the profile associated with the image, but do not change the numbers.

Generally, "convert" is what you want when an image already has a profile assigned. You would use "assign" if the image currently has no profile (is untagged), or if someone already did an "assign" with the wrong profile :-)

In your case, no the picture didn't gain in red color. This is the affect of converting the color values from the Adobe RGB color space to the sRGB color space (which has a smaller gamut).
