To start, I was in heaven, because all I had to do for thirty plus days was take pictures.

Then, I met some amazing people, fell in love with the children and animals, ate some great food, collected some fantastic recipes, had some fantastic photographic experiences and came away quite grateful for the opportunity.
This will have to be segment #1 -

Posole (serve for luck according to legend)

6 cups strong chicken broth
6 tablespoons Ancho chili paste (soak chilies in hot water in microwave. remove stems, blend in food processor to form a paste.)
2 tablespoons Chipolte chili paste
3 tablespoons fresh cilantro, chopped
½ to 1 whole cooked chicken, de-boned and chopped
1 32 oz can Posole [white corn] - (hominy is the closest thing I can get here, although it is not quite as good [softer and more bland so I am told])
1 teaspoon garlic, minced

Serve with chopped red onion, avocadoes, chopped tomatoes, Ranchero cheese (crumbled) and Mexican coleslaw.
Pile the extras listed above in the middle of your soup and dig in. Buena suerte!


Mexican Coleslaw (Cabbage)

½ head of white cabbage, chopped (I cheated – I used precut coleslaw. it contains shredded carrots and red cabbage also.)
2-3 limes (lemons verde)
½ red onion, chopped
2-3 Roma tomatoes
garlic
½ to 1 jalapeno, seeded, de-veined and minced
2 tablespoons fresh cilantro, chopped
1 teaspoon Balsamic vinegar
salt and pepper

Mix. Let sit overnight to marinate before serving.

I know you were there on a "work" gig, but is there the opportunity to turn some of these shots into a coffee table book ?? I would be first in line for it. Seriously !

Yeah - I'd go along with that! I used Blurb and MyPublisher for mine from Viet Nam, and am very glad I did. Blurb will even sell them for you online.

I love the top one - actually, they're all great, but I'm a sucker for a "young love" shot.

We stayed in Guanajuato, but I ventured out all over the place into the rural communties and countryside. It was a great trip.

Very nice, Donna! I was there in July '07, attending a friend's wedding. Lot's of photo-ops. It's what fueled me to take photography more seriously.

Fantastic serie, I especially love the first picture that has part of the city in the hill of the background. It's a lovely place. - Very good work!
