By the way, I stopped by River River BBQ and Grill on Mason Road for lunch yesterday. It has definite possibilities. Food was good. Tried the ribs (almost as good as mine), chopped BBQ sandwich, pinto beans, fried okra, fries and coleslaw. (No, I didn't eat all of that; there were two of us. I could have, though! No, the portions are large enough; I'm just a pig!) Prices are OK too.

They have booths along the walls, and I believe I counted 15 4-person tables in the middle. There is also an outside patio area, which we could consider when the weather permits. I think there is a sand pit out there for the crumb crunchers too.
Spoke with the manager, and she said that she can set us up for a large group. All we have to do is let her know in advance. Separate checks are OK, because we order individually up front. I didn't specifically ask if we could hang out for the evening, but I'll check next time I'm in there. Forgot to check the beer selection, but I think it might be just a little better than Fuddrucker's.
The manager said that Thursday evenings are usually light, at least until about 6:30 or 7:00, but if we schedule some space and begin arriving around 6:00, we should be OK. We should try to give her as accurate number as possible, though, if she is going to reserve tables for us.
One of the drawbacks to Red River is that it is not exactly on a major highway, like the other places are. It's a couple of miles south of I-10 and about four miles north of the Westpark Troll Road. It's not unreasonable, can't get lost going there, but it's a little more difficult, especially for those coming from any distance. (Of course, part of being in Texas is driving a hundred miles or so for a party!)
I'll keep checking out other places and report to you. I still want to check out Spring Creek, but I probably won't be able to do that until week after next. Got to go to a party a couple hundred miles away!
