What setting do you have your camera set to, and why? If shooting RAW and Jpg, is there really going to be that much added control?

Might as well do sRGB for jpg since you can't do much with one anyway. Raw and process in ACR with ProPhoto RGB. Here's why....

I shoot RAW+jpg so that I have instant proofs for my subject. Given my workflow is low volume, I choose only to process the RAW images for editing. Because of that I use sRGB for the jpgs. If I chose to shoot jpg only, then I would shoot aRGB and the lowest compression available to keep as much image information in the master file. And yes, I think it does make a difference if you do more processing with filters etc. If you're going direct to print with minimal processing and your printer gamut is within the sRGB space, I see no advantage to aRGB. Perhaps for archival reasons, but again the output medium should determine the color space required.

I own a 7d and always shoot in both raw and jpeg. For some reason if I shoot in sRGB mode the skintones look horrible. My color is way to orange and red. I have to adjust the color bracketts to compensate, but then the quality is not as good. In adobe RGB skin tones are fine. Has anyone had this problem? and how did you fix it?
