With LR3 I notice that you can import your files and have them automatically converted to teh DNG format. My question is, why would I want to do that? Isn't it better to retain the original RAW format or does DNG gain me something that I'm not aware of? Is anything lost when going to DNG? Why pick one over the other?

Raw-to-DNG is a lossless transformation. The information is exactly the same. It just helps ensure future compatibility with ACR. I started converting to DNG about a year ago. Some prefer not to do it, and that's fine. One advantage is it prevents the user from having to upgrade to the latest PS version just so ACR will handle their camera's raw files.

A web search will render more info on this format.
