Depends. Tilts just won't work for some compositions, when the desired focus isn't on a receding plan.

That said, my trials with DOF stacking have been disappointing. It's tedious to shoot, requires an absolutely static scene, and artifacts can be a problem when there are overlapping planes of focus (foreground subject sticking up and overlapping the background, for instance).
