I like 1. More of her. In 2 the eyes are too predominant. If you want the eyes emphasized, 2 is your shot.

1... the second one makes it look like she's much bigger than she actually is cause i can't see where the shoulder ends.

The first image is how I framed her in the shoot for some of the reasons mentioned. This shoot was for an MUA's portfolio and she needs 8.5x11 photographs for her book.

I cannot (or don't know how) to get the 11x17, original, to 8.5x11 without cropping out the white space and part of her right shoulder as seen in photograph 2.

Is there a trick or process I'm missing?

#1 is all around better for me - the shoulder in the picture is a plus. The shadows add something that is missing in #2. The slight offset out of center is pleasing to the eye as well.
