So I noticed that converting a raw files in Lightroom to .dng over-writes the original "created" date on the file. So regardless of when the shot was taken, the time the dng file is created becomes the file's original creation date/time.

While this is technically true - that the dng file was just created - it becomes an issue to go back and find out when a picture was taken. For example, when reading the info for a picture using finder in os x.

Is there a way to permanently embed the original info in the new dng file?...In preference or plug-in or something to stop this from happening?

i think the exif data keeps the original shoot date regardless of the last edit date

It does. I checked several of my files that were converted to DNG, and the original creation date is intact.

Good news is that I can open the .dng file in Preview and the entire EXIF info is visible in the Inspector.

Now I need to figure out how I can have Finder show the "Date Taken" info in addition to Date Created, Date Modified and Last Opened.

I import mine to a date folder, convert to DNG and rename the folder in LR to something meaningful that also includes the date. Just offering a different approach to seeing the capture date without having to open the file.

Also try viewing the info in the metadata tab in lightroom.

btw dng is adobe's horse so they are pushing it the most
One additional benefit is that with DNG, there is no sidecar file created when changes are made to the associated image; the info is stored within the DNG file itself. Not so with proprietary raw files.

OK. I might try it. So far, the one time I tried it the DNG file couldn't be read by some other software that I use. I don't remember which one. I just quit doing it for that reason.
