I recently used the Canon RAW BW settings on my 5D and was pleased with the cameras ability to pick up
the wihites and blacks. The two women shots are not retouched. I had to show the client the black and white images at the set so I shot the whole day in RAW-smjpg and B/W mode to review. Canon's DPP(Digital Photo Proessional) software allows you to change back to color if you want. Processing out of DPP isn't the best for managing images but it works. I'm not sure if anyone else shoots in this mode, but if you have I'd like know some of your likes and dislikes for using it. Here are some samples.

I like them. They have a nice color
of black and white to them.
Seems perfect.

Sounds neat, how you can change them back to color.

They are RAW.. so they are stored with all data. You just choose to process them in color. The B/W is just an interpretation of the RAW data. I find it pretty good too. I also shoot RAW+JPG B/W on occasion.

you can really tell the balance of the black white and grey tone still give them some depth
