Anything by Scott Kelby is a winner. He breaks it down so a layman could use PS.

I mean even I have learned to use it with his help.

I've learned PSCS2 & Dreamweaver by using Lynda.com. It is an online video training website. They have hundreds of other software and programs you can learn.

Update
I went back checked out other courses I've tried:
  • Enhancing Digital Photography Photoshop CS2
  • Intermediate Flash MX 2004
  • Introduction to Digital Photography
  • Learning Macromedia Dreamweaver MX 2004
  • Photoshop CS2 Essential Training
  • Photoshop Filters
  • Power Shortcuts for Adobe Photoshop CS
